Located in Southtown, Maverick will be a casual, up-scale dining Texas Brasserie. We will be serving a large French-inspired menu, broad but approachable wine program, and seasonal craft cocktail program. The ideal candidates are be self-motivated, hungry to learn, and excited about being part of a new concept that is food and hospitality driven. Also important is a strong work ethic, a hunger to learn and grow, a basic understanding of classic cookery, wine, beer, and cocktails, and previous experience with restaurant point-of-sale (POS) systems

Ideally, You Also Have:

1-2 years experience in a full-service restaurant
Culinary and/or Beverage Degree/Certification(s)

Maverick awakens and rewards all of its guests’ senses with friendly hospitality.

It’s both an everyday neighborhood hangout and a food-lover’s destination for special occasions. Where regulars will want to linger all day eating from small or large plates as they make memories over the open fire.

It is a generous and friendly gathering place for locals and travelers alike. The food and drink menus are broad yet refined in the simplest way that will have something for everyone. As a Texas brasserie, Maverick features a menu that is classically prepared and uses Texas ingredients when possible — most of the fare is cooked over a live wood fire.

Our Crew

Maverick is a new vision by Peter Selig. Selig made his mark in San Antonio by helping to found destinations like Biga on the Banks and Acenar! With The Maverick, Selig is excited to showcase the talents of Chef/Partner Chris Carlson. Supporting him are a strong leadership team of Miguel Ardid and Joshua Thomas, plus a skilled service staff, a vibrant atmosphere and knowledgeable business people.

Open Kitchen

Guests can cozy up to the action as chef Chris Carlson wields an open flame to prepare unforgettable meals. Turn to the front of the house and you’ll see Miguel Ardid, Director of Operations, poised to help lead the Maverick team in providing superb hospitality. It is an approachable, relaxed atmosphere with focused cuisine. Finally, after 13 years in California, Joshua Thomas returns to San Antonio as one of the best sommeliers in the country. He, and the whole Maverick team, will be treating you to a legendary dining and drinking experience.

Food & Drink

Maverick’s curated wine list specializes in wines from France and California: many unique selections at great value. Look for a robust by-the-glass wine menu for more affordable and experimental approach to drinking wine. Maverick’s handmade copper bar will feature handcrafted classic cocktails, plus a large selection of Texas beer on tap and the strongest espresso in town.

The inventive menu will include rotisserie meats, fire-kissed steaks, shared plates, housemade desserts and pastries. All inspired by French brasserie-style fare. Maverick’s menus will have its guests returning for brunch, lunch, dinner, happy hour and late-night dining.

Private Dining

Situated in the historic and artsy neighborhood of Southtown, Maverick is conveniently located within walking distance to downtown hotels, the River Walk, and the Convention Center in Hemisfair Park. It also offers ample on and off street parking, and the option to valet at the front door. For private dining, the Party Room on Presa seats from 20 to 75 with patio bar to start the evening. The Reserve Wine room is an enclosed space perfect for gatherings with 12-14 guests. All can be reserved through our banquet department.

Our Space

Diners can choose from cozy tables for two, sexy banquette seating, the livelier chef’s table, a seat at the handmade copper bar or al fresco dining complete with a patio bar. Sanders Architecture and Cravotta Interiors, from Austin Texas, have taken this industrial and retail space and transformed the brick walls, concrete floors and wood beam ceilings into a warm, yet contemporary brasserie. The 7,200 square-foot interior can hold more than 200 guests for lunch, dinner and brunch service. From Maverick, diners can stroll along quiet leafy streets populated with art galleries and magnificent historic homes, or they can hop over to more famed Southtown bars and restaurants. But be warned, once diners go Maverick, it will be hard to go back to all the others.
